The tradition of communal breweries goes back centuries. In the past, most places had a communally operated brewery that could be used by local residents to brew beer. A trained master brewer was always present to help laymen with the brewing. Private individuals as well as landlords and restaurant owners took advantage of this opportunity to meet their beer needs. The rush to the communal breweries was accordingly high. In Höchstadt an der Aisch, the communal brewery was so overloaded that seven local restaurant owners decided to take matters into their own hands.
The Höchstadt innkeepers were fed up of sharing their brewing capacity with private individuals and all sorts of other people, so they joined forces and leased the brewhouse of the former Dresel brewery in 1926. They refurbished the aging facility and got started shortly afterwards. Beer production went so well that just a few years later the small brewery was bursting at the seams and they had to look for another location. In 1936 the community bought a piece of land and built a brand new brewery. After the Second World War had passed and left no damage, the brewery was immediately modernized and expanded again. To date, several buildings and all kinds of technical aids have been added. Despite the leap into modern times, the brewery in Höchstadt an der Aisch has retained some traditions. These include, for example, home brewing. According to old tradition, the town's residents can bring their own barrel to the brewery and it is filled with young, unaged beer. You can then let the brew mature at home in your own cellar to your taste. Many breweries used to offer this service, but today only a few remain.
The Höchstadt brewery's range is a hodgepodge of traditional Franconian brews. All creations are based on years of brewing experience and tried-and-tested recipes. The water for the beer comes from the brewery's own well and the hops and malt also come from the region: the brewery gets its green gold from Spalt and the grain for the brewing malt grows on Franconian soil. These exquisite raw materials are made into the finest beer according to the strict specifications of the Bavarian Purity Law. In addition to the quality of its products, the brewery is also committed to social and cultural causes. The team supports regional festivals, clubs and events and is an active part of life in and around Höchstadt.
