In 1948, the Notre Dame de Scourmont monastery decided to brew a very special Christmas beer: Bleue. In addition to Brune and Tripel, Bleue is the third beer in the group and adds a festive specialty to the range of classic Belgian beers.
Deep black with a ruby red shimmer, the Chimay Bleue with a stately head of foam exudes a unique charm even before tasting. The strong Trappist beer exudes complex aromas of dark fruits, sweet caramel and mysterious spices. The taste follows the olfactory first impression straight away and delights with a wide selection of full-bodied aromas. Subtly balanced, soft caramel notes, spicy yeast, a touch of vanilla and dried red berries caress the palate. The lively carbon dioxide gives the voluminous body an elegant lightness, while a subtle bitterness balances the heavy sweetness. The best way to enjoy the Chimay Bleue 2014 Péres Trappistes is on a cozy evening in front of the fireplace with a strong Roquefort on a baguette toasted with a little garlic and olive oil.
Our tip for real gourmets: We recommend storing the Chimay Bleue in a cool cellar for three to five years, this enhances the subtle port wine character of this unique beer and takes the enjoyment to the next level.
The Bleue from Chimay is available in the normal 0.33l bottle and in the festive Grand Reserve version with a real cork and 0.75 liters.
