The Wachau Auwald is a very special habitat. Lush meadows and small forests are fed by the many branches of the Danube and over the centuries have adapted to the humid climate and the occasional flooding. Flora and fauna in floodplains live in harmony with the water and only thrive when they have enough of it nearby. The white willow is a tree found along rivers, streams and lakes across Europe. Unlike most trees, these special willows not only tolerate flooding and waterlogging well, they need it for optimal growth. Meadowsweet is also at home near the river. Long before you see its fine flowers, you can already smell their fragrance: the delicate white grape gives off an irresistible scent of almonds and honey.
Master brewer and beer sommelier Axel Kiesbye spends his time in the forest with great passion. Every year he hikes through Austria’s magnificent nature and collects the main characters for his forest beer. In 2022 it will be white willow and real meadowsweet. As a basis, the creative brewer created a golden beer that was flavored with white willow bark and dried meadowsweet blossoms during the brewing process. At the end there is a fresh beer with an exquisite bouquet of apple notes, sweet hints and the aroma of spicy wild herbs.
