The so-called California Common is a style of beer that is similar to steam beer. The specialty is fermented at an average of 20°C, but instead of the ale yeast that is usual for this temperature, a lager yeast is used. This is normally fermented at lower temperatures of seven to thirteen degrees. The unconventional combination of yeast and fermentation temperature gives the beer a juicy fruitiness and a clean, clear mouthfeel.
This technique was masterfully implemented in a collaboration between Tilmans Biere and the Braukollektiv Freiburg. The craft beer experts pooled their knowledge and created Hot Damn Lager. The classic California Common combines the typical IPA hop varieties Idaho 7 and Comet with the recipe of a pale ale and the yeast of a lager beer. The end result is a beer full of character with a stable stature, a tasty 5.4% alcohol content and sparkling carbon dioxide.
The Hot Damn Lager has the color of noble acacia honey and is crowned with a stately peak of airy, blossom-white foam. The scent of ripe, juicy pears rises and combines with freshly mown grass, light malt and yeast to create an enticing bouquet. A medium-heavy body with dry bitterness, mild sweetness and an aroma composed of fruit notes, cereals, yeasty spice and hints of citrus reveals itself in the initial taste.
