For the Blech.Brut brewery in Bamberg, cellar beer is right in the middle of the comfort zone: Upper Franconia is a paradise when it comes to beer gardens and cellars, and it seems as if every village has its very own cellar beer to go with hearty snacks, sausages and buttered pretzels. The region has an unbelievable range of hearty variants of the classic beer style and probably every Franconian brewery has at least one cellar beer in its range. Anyone who thinks that a cellar beer is just a cellar beer is wrong!
Blech.Brut's cellar beer, which is special in every respect, was created in collaboration with Malto Brewpub and resembles its colleagues right through to the completion of the brewing process. But then the brewers take a small but effective detour: instead of bottling their work directly, they store their cellar beer on wood chips of the "Pure Vanilla American Oak" variety. This extra step and the associated storage give the beer its depth of flavor and the appealing notes of earthy vanilla and fragrant oak. In the glass, the brew is brilliant and golden with a creamy foam crown in blossom white. The oak and vanilla notes just mentioned run like a red thread through the enjoyment of beer and characterize both the smell and the taste. They harmonize wonderfully with the soft malt and the strong hop bitterness.
