Axel Kiesbye is known for his great commitment to beer: the beer-loving Austrian by choice not only brews excellent beers, he also initiated training as a beer sommelier and oversees numerous projects relating to beer.
What is most important at this point: His Waldbier 2020. The wild brewer is a passionate hiker and roams the lush Austrian landscape with open eyes. On his extensive excursions into the country’s hidden corners and deep forests, he repeatedly encounters plants that stimulate his imagination. At some point Kiesbye decided to turn these wonderful impressions from nature into the finest beer. In 2020, the oak served as his inspiration. In order to give his beer a balanced oak character, the brewer selected the oaks he needed five years ago: The hand-picked trees were felled and processed into barrels by skilled craftsmen. The finished barrels were then toasted according to Kiesbye’s ideas and were therefore ready to give the forest beer its fine aroma. The result is a finely composed symphony with notes of spicy forest honey, ripe mirabelle plums, coconut and rum.
In order to close the cycle and give its forest beer a certain sustainability, Kiesbye donates one euro per bottle sold to a reforestation project that supports endangered oak forests with young oaks.
The forest beer is available in sizes 0.33l and 0.75l.
