This circumstance was due to the then common technique of drying over a wood fire. When dried by the smoke, the germinated malt acquired its dark color and strong flavor. Then, in the 18th century, the use of coke, a coal-like fuel, emerged and brought the beer world malts that were light and delicate. Brewers took direct advantage of this brand new raw material, brewing golden-bodied beers with a milder, smoother taste.
The Austrian brewery Bevog continues the English tradition of ales and has specialized in the production of this classic style of beer. A young and fresh take on British beer, their Pale Ale Tak is brewed with an aromatic blend of two malts and four hops.
