As a rule, modern India Pale Ales are characterized by their strong hop character. The malt plays a subordinate role and only acts as a complementary support for the hoppy dominance. Still, one shouldn’t underestimate the importance of malt in the IPA: It provides a soft base for the hop escapades, fills the body with substance and texture, and harmoniously rounds off the edges of the hops.
The brewers of the Czech brewery Rebel Brewing demonstrate a particularly skilful hand in handling malt with their very own interpretation of an India Pale Ale: They contrast the four hop varieties with an abundance of no less than five different malts and enrich the fruity, bitter and fresh aroma of hops with creamy notes of caramel and a sweetness that melts on the palate.
Rebels IPA flows into the glass in a dark gold tone and is adorned with a handsome head of foam. Aromas of caramel, candied plums and freshly mown grass fill the air and make you excited for the first sip. This reveals a medium-heavy body with gentle carbonation and a palatable character. Notes of green hops, toffee, sun-ripened cereals, delicate citrus fruits and playful flowers combine to create a summery play of aromas. A mild bitterness completes the beer enjoyment.
