Number 8 is the youngest member of the family of Trappist beers from Rochefort. In contrast to the strong 10 and the strong 6, the 8 is milder and has a range of fine, well-balanced flavor nuances. Affectionately called “Spéciale”, the 8 is a delicately composed masterpiece of delicate aromas.
The number 8 from the Trappiste Rochefort brewery flows into the glass in a dark caramel brown and is slightly cloudy. A stately head of foam sits on the deep brown beer and exudes a heavenly scent of red wild berries, creamy caramel, brown sugar and spicy gingerbread. On the palate, the Trappist beer is complex and sophisticated: a soft malt taste unfolds in the mouth and gradually unpacks delicious aromas. Notes of dark fruit, oven-fresh bread crust, rum-pickled raisins, brown sugar and spicy yeast are layered on top of each other and pamper the tongue with sophistication and elegance. The sparkling carbon dioxide gives the beer a playful lightness, the warm, soft sweetness is balanced by a pleasant dryness. Towards the finish, a harmonious acidity builds up, giving the aromatics a surprising kick.
With this beer, the Trappist monks of the Abbaye Saint-Remy de Rochefort have outdone themselves. It is incredibly diverse and at the same time dangerously drinkable.
